5 Minute Super Healthy Mug Muffin
In a large coffee mug, mix together:
- 1 egg
- 1/4 c. whole oats, milled in a coffee grinder (OR use oat bran, but this is nicer I think, and it's the WHOLE oat which I prefer to use).
- 2 T. whole flax seed, milled in a coffee grinder
- 1 tsp. coconut oil
- 1 tsp. xylitol
- 1 tsp. baking powder
Gently mix in:
- 2 handfuls of fresh blueberries
Nuke for 90 seconds. Let cool a bit. It's piping hot!
