Anyway, the helpful Trader Joe's guy (one of many, right?... I LOVE Trader Joe's because everyone is so cheery and helpful!) gave me some tips on a great addition to Dane's birthday salad: Quinoa. I incorporated his ideas and made this tasty, healthy salad that we gobbled up!. By the way, did you know that quinoa (KEEN-wah) is a seed and not a grain? Whatever it is, it's yummy this way:
QUINOA SALAD
1 c. Trader Joe's Tricolor Quinoa
2 c. Trader Joe's Free Range Chicken Broth
-- cook according to package directions --
Meanwhile, chop up 1 bell pepper (I used an orange one for color), 2 scallions (aka green or spring onions), and enough yellow baby tomatoes to equal the amount of the pepper and onions (apx. 1- 1/2 cups chopped).
When the quinoa is cooked, let it cool for a short bit (try fluffing it with a fork to speed cooling). Then, combine the quinoa with the chopped bell pepper/onion/tomato. That's it! Easy!
