healthy summer salad

I adapted a wonderful light-lunch entree from The Bluewater Grill (Redondo Beach, CA) and came up with this.  They make theirs with a tastier cheese (burrata), but this works for me as a refreshing summer lunch.  If I can find that burrata cheese, I will use that instead of the mozzarella.  It may be a few more calories (not sure), but the difference in taste is appreciable!  Also, BWG uses watercress as the bed of greens.  I liked this better than the TJs Micro Greens (I may just grow my own if I can't find them in the store... flippin' greens are expensive!  You could also use any salad green.  One exception:  if you use iceberg lettuce, I will personally come over and smack you. Ha!)

Heirloom Tomato Caprese Salad (makes one lunch entree)
-Trader Joes Ciliegine Whole Milk Fresh Mozzarella - 6 balls
-Trader Joe's - Organic Micro Greens, 1 container (2 cups ea) 
-Trader Joe's - Mini Heirloom Tomatoes, apx 6  
-Olive Oil , 1 tbsp 
-Balsamic Vinegar, 2 Tbsp

Place the Micro Greens down as a "bed" for the quartered tomatoes and mozzarella balls.  Drizzle the olive oil and balsamic vinegar over all.  Season with salt as desired.  (I salt the mozzarella balls, mainly.)

Per Serving: 301 calories; 13 gms. carbs; 23 gms. protein; 15 gms. fat.
